Tips

We need accuracy to prepare cookies, biscuits, cakes. When cooking we can many things repair, but when cookies are in oven we can't repair anything. So we have to measure precisely just like recipe dictate.

When we use spices, we can chose our own. We can change quantity and combination of spices by our own taste. We can also change nuts with almonds or inversely.

Prepare all ingredients at right time that they can reach room temperature.

Right tool will relieve us. Very important is balance and measure for liquid.

If dish for mixing doesn't have rubber below, put there damp compound serviette, to prevent dish to slide.

Roller should be thick, that we won't touch dough.

Pick the right baking tin. Black baking tin is good for take over heat and equally translate to dough. Black baking tin are recommended for electric and ventilating oven. Good results can give us enamelling baking tin; if you bake much, you consider to buy one. Aluminium baking tin is good for gas oven.

It's good to have net for cooling; if cookies lying on closed surface, they start to sweat and become dump.
