Preserving
Cookies must be very chilled. If you have fragile cookies, you put them into plastic bag or tin box and close well. For cookies, which become soften, you leave them on air couple of days and not until than put them in boxes.
Different types of cookies in one box separate with alu-foil. Strong spiced cookies preserve in same box. It's not good to mix those cookies with others.
Freezing
You can also freeze. Fragile cookies freeze on hard ground and then fold them in layers and put them in plastic box. Other cookies you can put into plastic bags. They preserve for about 3 weeks.
