Chocolate recipe
Ingredients
 
100g of date
2 glairs
100g sugar
1 vanilla sugar
1 tablespoon of rum
pinch of cinnamon
50g of grind almonds
50g sliced almonds
approx. 90 peaces of wafers
300g of chocolate couverture
 
First of all, cut well dates. Then beat hard glairs, add sugar, vanilla sugar, rum, cinnamon, grind almonds and sliced almonds.
Preheat oven to 125 degrees. Put filling on one wafer. That filling may be 1cm thick. Then put other wafer on top. Do this with all filling. Then put all chocolate cookies on baking tin and dry 30-40 minutes. Then mollify couverture over water bath (see below for description) and dip in chocolate cookies. When chocolate is cool, decorate cookie with couverture.
WATER BATH - First you put water in pot. Then put it to boil ans when water boil, put over steam plate or small pot where chocolate is. Thats how you melt over steam.
