Butyric pretzel
Ingredients:
500g flour
30g leaven
50g sugar
1/4 L milk
100g butter
1 egg
1/2 teaspoon salt
grate peel of lemon
pinch of piment
pinch of ginger
cup of sugar
1L oil for fry
 
Sift flour into bowl and make small pit in the middle. Crumble leaven into small pit and mix it with little sugar, milk and little flour. Ferment may rise 15min.
Melt butter and foamy mixed with egg, remnant sugar, salt, lemon peel, piment, and ginger powder. Put that mixture to ferment, mixed all flour and beat into soft dough. Leave dough to rise 15min.
From ferment dough tear to 50g peaces and shape them to balls. Roll them into ribbons, and fold them into pretzel. Put them rise 15min.
Preheat oil to 175 degrees. Put in each time 2-3 pretzel, and fry them crispy. When they are fried, put them on paper to strain fat. Put caster sugar on the, when they are still hot. You can make 20 pretzel with those ingredients. I hope you like this recipe :)
